The perfect food ever? Avocados, hands down. They come in they're own little natural bowl, taste freaking delicious with basically everything and of course, take centerstage in the perfect party appetizer: guacamole. Nancy Liu Chin agrees and she's sharing her favorite recipe with us today! Get ready for those summer guac offs friends, this one is a contender for our Best Ever Guacamole.
The Perfect Party Guacamole
|2 Large Haas Avocados||1 Large Lime|
|2 Large Spoonfuls of Mexican Salsa (roma tomato, onion and cilantro, also known as Pico de Gallo)||Salt to taste|
|1 tsp of diced Chile Habanero with Olive Oil (fuego verde)||1 Molcajete|
|1 Knife to cover Avocados||2 Spoons to Mix Ingredients|
Squeeze Lime Juice onto the Molcajete. Just a few drops in the beginning.
Choose a large ripe Avocado as that will look the prettiest. Too ripe will have some brown. Not ripe will be too hard to "mix" together.
With the knife, cut the Avocado in half.
Scoop out the avocado with the spoon.
Add the avocado straight into the Molcajete. Mash the avocado until you get a mole paste consistency.
Add 2 teaspoons of the Mexican Salsa. Mix again.
Add more lime juice.
Add salt to taste.
Incorporate well but not too much.
For a spicy version, which I like, have a little Fuego Verde (Chile Habanero diced in olive oil) on the side.
Serve in the Molcajete along side Tortilla chips
