Cream cakes are deceivingly easy to make. Shhhh...I even cheat! The mascarpone cream is so lush and sweet, no one even notices that I use a cake mix. Sometimes, I even ask the bakery at our local grocery store for 2 nine inch cake layers that I can take home and freeze. This cake is perfect for any occasion. In fact, the cake in itself is an occasion!
Easy Naked Cream Cake
|2 - 9 inch cake layers of your choice||2 c heavy cream 8 oz mascarpone cheese|
|1 c powdered sugar berries of your choice|
Lightly freeze your cake layers for easy slicing.
Beat heavy cream until soft peaks form.
Blend in mascarpone cream. Gradually incorporate powdered sugar. Beat until stiff.
Slice your cake layers in half and place your bottom layer on a platter or cake pedestal.
Add a large scoop of cream to the center of your cake and spread using a spatula.
Alternate cream and cake layers.
Top with berries, allow to come to room temperature and serve.
