Cocktail Cheer with Pomegranate-Bourbon Reduction

This time of year, I look for anything and everything that I can add pomegranate to. It's such a yummy addition and cocktails are no exception. Case in point this pomegranate-bourbon rendition appropriately titled "Cocktail Cheer". Total Time
2 tablespoons of lychee syrup and 3-4 lychees 1 teaspoon rosewater
champagne pomegranate seeds
strawberry for garnish
Combine 1 tablespoon of pomegranate-bourbon reduction, 1 ounce of vodka, 2 tablespoons of lychee syrup and 3-4 lychees, 1 teaspoon rosewater
Top off with champagne and pomegranate seeds
Garnish with strawberry
Note: To make pomegranate-bourbon reduction - Combine 1 cup of pomegranate juice, 2 tablespoons of Kentucky bourbon, and 1/4 cup of sugar in a saucepan. Heat for 6-7 minutes, stirring constantly to keep from burning sugar. Should reduce by half.
