Caprese Summer Salad With a Twist

I love a good Caprese Salad in the summertime, it's just so refreshing and light in the hot summer months. And, anytime you mix heirloom tomatoes, basil, and cheese it's bound to be amazing! This salad is a twist on the traditional Caprese Salad, combining fresh peaches, tomatoes, and feta with a sweet honey vinaigrette. The best part - it's super simple!
Caprese Salad with a Twist

1/8 Cup thinly sliced red onions 1 large heirloom tomato (coarsely chopped)
2 large ripe peaches (pitted and cut into thin wedges) 1/2 cup cherry tomatoes, halved (I went with the golden cherry tomatoes for a little added sweetness)
1 Tsp Balsamic Vinegar 1 Tbs Extra Virgin Olive Oil
1 Tsp Honey 1/4 cup crumbled Feta Cheese
1 tablespoon fresh basil leaves (julienned)
Combine the tomatoes, peaches, and onions in a large bowl
Mix the Balsamic Vinegar, Olive Oil, and Honey in a small bowl - stirring with a whisk
Drizzle the dressing over the salad, then top with fresh basil and feta cheese
*Side note: You can also add salt and pepper to taste, depending on your preferences*
