Here is the detail of the menu imagined by C Gastronomie and Mickael Iachini for the desserts. The starter is a Artichoke mousseline with grappa, poached egg, bouquet of vegetables with young shoots, grated fresh truffle The main course is a Château Rossini-style roast beef fillet Anna apple and spinach, Foie gras sauce. The wine chosen for the starter is a Saint-Véran en Faux – Château de Beauregard – 2018 For the main course, an amazing Pommard 2020 – Clos des Roses is the perfect choice.
