Fabulous Stir-Fry (Diet Approved)Option: Enjoy this dish alone (just the chicken and veggies) or on top of ½ cup rice.

Serves 4Ingredients- 1 lb. chicken breast
- 4 Tbsp olive oil
- 2 cups broccoli florets
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup mushrooms, sliced
- ½ large onion, diced
- 1 Tbsp garlic, minced
- 1 Tbsp fresh ginger, grated
- 2 Tbsp low sodium soy sauce
Instructions- Heat 2 Tbsp olive oil in a pan over medium heat
- Cut the chicken breasts into small pieces and add to the pan, covering with a lid until each piece turns white
- Remove cooked chicken from pan and set aside in a bowl
- Add 1 Tbsp olive oil to pan, and add the onions and garlic, stirring occasionally until the onions began turning translucent
- Add remaining 1 Tbsp olive oil and the rest of the vegetables to the pan (broccoli, red pepper, green pepper, mushrooms), cooking for 5-6 minutes
- Add cooked chicken back into pan with all the vegetables, and throw in the soy sauce and fresh ginger, stirring until the chicken starts to brown
- Remove from heat and enjoy 1 cup for lunch, saving the leftovers for the rest of the week!
