Though we’re still technically in the throws of winter, Valley & Co.‘s take on a sweet cocktail has me craving the warmth and sunshine. A touch of mint, some homemade raspberry puree, and a splash of champagne makes for a bevvy that simply can’t be beat.

- 3 oz. fresh raspberries
- 3 Tbsp. water
- 1 oz. club soda
- 1 tsp. sugar
- Min sprigs
- Purée the raspberries and water and strain out the seeds using a fine sieve. In a cocktail shaker add sugar and one sprig of mint. Muddle together.
- Add ice, raspberry juice and club soda. Shake for a minute and pour into a champagne coup.
- If you want an alcoholic version, add St. Germain liqueur or a splash of champagne.
