Though we’re still technically in the throws of winter, Valley & Co.‘s take on a sweet cocktail has me craving the warmth and sunshine. A touch of mint, some homemade raspberry puree, and a splash of champagne makes for a bevvy that simply can’t be beat.

Serves 1Ingredients
  • 3 oz. fresh raspberries
  • 3 Tbsp. water
  • 1 oz. club soda
  • 1 tsp. sugar
  • Min sprigs
  • Ice
  1. Purée the raspberries and water and strain out the seeds using a fine sieve. In a cocktail shaker add sugar and one sprig of mint. Muddle together.
  2. Add ice, raspberry juice and club soda. Shake for a minute and pour into a champagne coup.
  3. If you want an alcoholic version, add St. Germain liqueur or a splash of champagne.
