I was on a flight from LA to Boston (Virgin America which if you haven’t flown, ummm…it’s awesome) and they gave me a bag of caramel popcorn. And the whole damn bag was only 100 calories. The BIG bag at that. So thus began my obsession with caramel popcorn. Which I may or may not have every day with my soy mocha. So here is my skinny gift of goodness. Caramel Popcorn without any guilt at all. Yum.


1 bag 100 calorie popcorn
1/8 cup sugar and 1/8 cup honey
2 tablespoons butter (optional)
salt (optional)


1. Pop the popcorn and set aside.

2. Melt the honey, sugar and butter together in microwave or on stovetop.

3. Pour the almonds, and the popped pop corn in the bowl and stir it up reaaaaal good until every last piece of popcorn is coated in goodness.

4. Okay, so at this point, we just ate it. Because we couldn’t help ourselves. But, if you like it crunchy, bake for 1 hour at 250 degrees (on parchment paper), stirring every 15 minutes or so.
