In our house, lazy Summer celebrations like Memorial Day, always come overflowing with food. And not just regular old food. We’re talking the best food you could ever imagine. BBQ ribs, grilled veggies, creamy potato salads and well, the list of sinfully delicious food just goes on and on. So for me, bite-sized tasting portions are everything. Otherwise, you would literally have to roll me into bed tonight. Which is why making these strawberry shortcake-letts always tops my must-have al fresco entertaining list. Trust me, it’s the most perfect bite of something sweet you’ve ever had. And I dare you to eat just one.

STRAWBERRY SHORTCAKELETTS

PreMade Poundcake or this amazing recipe here
1 cup premade whipped cream or just whip a carton of heavy cream with 1 TBS of powdered sugar
4 ounces cream cheese
2 TBS sugar
strawberries, sliced

First, cut your pound cake into 1/2″ slices. Using a tiny circle biscuit cutter, cut small circles out of each slice. In a small bowl, combine 2:1 parts whipped cream and cream cheese. We added a TBS of sugar and stirred really well. Top each pound cake disc with a dollop of cream and finish with 3 slices of strawberries. Try not to devour before your guests arrive.
