It’s been a busy week here at SMP Living, chock full of lovely things of the very best kind, but I have to admit that I’m ready for the weekend to show it’s face! And what better way to kick off the end of the week than with a cocktail that’s equally as pretty as it is delicious. The talented ladies at Spoon Fork Bacon have done it again with their crazy innovative, beyond fabulous concoctions; this time with a hibiscus infused vodka cocktail. And to that, I raise my ruby-coloured glass in a toast! Happy almost-weekend my dears.
Hibiscus Infused Vodka Cocktail
1/2 cup loosely packed, dried hibiscus flowers
8 oz. good quality vodka
2 oz. Chambord
1 lime, juiced
16 oz. diet tonic water
lime wedges 1. Stir hibiscus flowers into vodka (preferably stirred together in a mason jar). Cover and allow mixture to infuse for 12 hours. Strain mixture, discarding flowers.
2. Pour infused vodka, Chambord and lime juice into a cocktail shaker and fill with ice. Shake for 1 minute. Divide mixture between 4 glasses, fill with ice and top each glass off with diet tonic. Stir.
3. Finish each cocktail with a lime wedge and serve.
