Currently I am working on an event with the same theme.  For the guest tables we are looking at using manzanita branches with hanging votive candles and mirrored garlands with moss around the base.  On several other tables we are going to use large round low clear glass bowls with deep blue water, white orchid bloom floating with floating candles along with curly willow wrapped in the bowl.  On the head table we are going to attach curly willow to the edge of the table with mahonia leaves tucked in here and there along with orchid blooms.  I have  a picture of a head table I designed for a wedding this past spring where we used the same idea.  Drop me a line and I'll be happy to send it to you.  You can also visit my blog to see a slide show of the wedding.  The name of the wedding is The McCall Wedding.  You can find it at http://appleblossomstampa.blogspot.com Hope this gives you some inspiration.
