For me, this cookie is the perfect gifting cookie. Wrapped up beautifully, Brown Eyed Susans are the kind of cookies that are universally loved. So to score a “Grandma Approved” version of the classic, well, I’m feeling like I hit the cookie jackpot. A huge thank you to Shelley’s grandmother for making our cookie adventures that much more delicious.
- 2 sticks oleo
- 3 tablespoons sugar
- 1 tea almond extract
- 2 c flour
- 1/2 tsp salt
- 1 c confectioner's sugar
- 1/2 tsp vanilla extract
- 2 tablespoons cocoa
- 2 tablespoons hot water
- Cream oleo.
- Add sugar, almond extract, flour and salt.
- Roll a tablespoon of dough into a ball. Flatten slightly with your thumb. Place on a greased cookie sheet and bake 400 degrees for 12 minutes. Remove and let cool.
- Make frosting by combining sugar, vanilla, cocoa and water in a bowl. Mix until smooth.
- Top cookies adding an almond before the frosting hardens.
