Appetizers on Thanksgiving? What’s that you say? I know, I know, there’s already enough to do. But seriously guys. These little bites are just the trick to keep your guests hunger at bay and give them a little preview of your fabulous feast to come. Plus,  it’ll pair perfectly with a Pear Ginger Fizz!

Pear & Goat Cheese Bruschetta

Serves 8Ingredients
  • 1 long french baguette
  • 4 large pears (about 2lbs)
  • ⅓ cup brown sugar
  • ⅓ cup chopped raisins
  • ⅓ cup apple cider vinegar
  • 2 tsp fresh ginger (peeled & grated)
  • ¼ tsp salt
  • 10 oz log of goat cheese
  • parsley (for garnishing)
  1. Preheat the oven to 350 degrees F. Slice the baguette into diagonal slices about ½” thick, and place the slices on a baking sheet. Toast for about 10 mins, until crisp (flip the sides over 5 mins in). Let the slices cool on wire racks.
  2. Peel & core the pears, then slice into small ½” slices. Put the pears, sugar, raisins, vinegar, salt & ginger in a nonstick pan and cook for 25-30 mins on medium heat. Stir frequently for the last 10 mins of cooking, the mixture should thicken and turn dark brown as the sugar caramelizes.
  3. Spread a teaspoon of goat cheese on each bread slice and top with a spoonful of the pear chutney and a parsley leaf for garnish.
  4. Tip: You can prepare this chutney up to a week ahead of time & refrigerate! On thanksgiving all you’ll need to do is heat it up, toast the bread, & assemble.
