We only had 65 guests, so we just order a few pounds of each kind. I think the best way to do it is just to choose your jars and vases and then figure about how much of each thing you'd need to fill the vessel up to the right spot. We bought little cellophane bags from Michael's, and the bird stickers were custom made by everyjotandtittle.etsy.com using a bird Allen & I drew and used on our invitations. Also, my mother just corrected me and said the scoops came from scoops-scoops.com, and a lot of the candy came from ohnuts.com. Thanks!
