They grow on long stalks, and will last a long time - you could set up the branches in the vases days ahead, and then just have someone cut the orchids off the stalk an attach them to the branches the morning of. They'll easily last all day and night without water. Just be sure to hydrate them plenty before that! It took a lot of split peas to get that effect, I think we bought about 40 pounds for Darcy and Matt's wedding!
